When you get to the turn and river, it is especially important that on average you have the better hand. You don't want to always be the one drawing for something, or even worse drawing dead. So these stats tells you how well you are doing pre-flop and on the flop of picking good hands to play and not continuing with losing hands for two long. It is similar to a winning show-down percentage, just on earlier streets.
